Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a 9x13-inch casserole dish with cooking spray.
  2. In a large skillet, cook the ground beef and diced yellow onion over medium heat for about 5–7 minutes until browned.
  3. Stir in minced garlic and cook for an additional 1–2 minutes.
  4. Add taco seasoning and water, stirring to combine and simmer for 3–5 minutes until thickened.
  5. Mix in fire-roasted diced tomatoes, green chilis, and black beans; heat through for about 3 minutes.
  6. Layer 6 corn tortillas at the base of the casserole dish, spread one-third of the meat mixture over, and sprinkle with 2 cups of cheese.
  7. Repeat layering with another 6 corn tortillas, meat mixture, and cheese, and top with remaining cheese.
  8. Cover with foil and bake for 30–40 minutes until cheese is melted and bubbly.
  9. Let the lasagna rest for about 10 minutes, garnish with diced tomatoes and chopped green onions, and serve with sour cream.
