2 tablespoons olive oil
1 pound snapper fillets
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup diced onion
1/2 cup diced bell pepper
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup cherry tomatoes, halved
1/4 cup chopped fresh parsley
Juice of 1 lemon
Instructions
In a large skillet, heat the olive oil over medium heat. Season the snapper fillets with Cajun seasoning, salt, and black pepper. Add the fillets to the skillet and cook for about 3-4 minutes on each side until they are golden brown and cooked through. Remove the snapper from the skillet and set aside.
In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and let it cook for about 3-4 minutes until slightly thickened.
Add the cherry tomatoes and return the snapper to the skillet. Spoon some of the sauce over the fish and let it simmer for another 2-3 minutes to heat through.
Remove from heat, stir in the chopped parsley and lemon juice. Serve immediately.
Notes
For a spicier kick, add a pinch of cayenne pepper to the sauce.
Serve over rice or pasta to soak up the creamy sauce.
