Step-by-Step Instructions for Lemon Sorbet
  1. Chill the ice cream maker bowl according to manufacturer's instructions (ideally 24 hours beforehand).
  2. In a medium saucepan, combine 1 cup of water and 3/4 cup of sugar over medium heat. Stir until sugar completely dissolves and becomes clear (3-5 minutes). Let cool to room temperature.
  3. Mix the cooled simple syrup with 1 cup of lemon juice and the zest of 2 lemons in a bowl. If using vodka, add it now. Stir well.
  4. Pour the mixture into your ice cream maker and churn for 15-20 minutes until it reaches soft serve consistency.
  5. For firmer sorbet, transfer the churned mixture to a container and freeze for an hour. Stir midway for even texture.
  6. Serve using an ice cream scoop. Garnish with fresh mint or basil if desired.
