- Chill the ice cream maker bowl according to manufacturer's instructions (ideally 24 hours beforehand).
- In a medium saucepan, combine 1 cup of water and 3/4 cup of sugar over medium heat. Stir until sugar completely dissolves and becomes clear (3-5 minutes). Let cool to room temperature.
- Mix the cooled simple syrup with 1 cup of lemon juice and the zest of 2 lemons in a bowl. If using vodka, add it now. Stir well.
