  • 2 tablespoons Cornstarch For crunch, can substitute with arrowroot powder

  • 1/4 cup Lemon Juice Freshly squeezed for best flavor
  • 1 tablespoon Lemon Zest From fresh lemons
  • 2 tablespoons Maple Syrup Agave syrup can be used as an alternative
  • 2 tablespoons Soy Sauce Can substitute with tamari for gluten-free
  • 1/2 teaspoon Black Pepper Freshly cracked preferred

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the cauliflower into evenly sized florets (1.5 to 2 inches) and toss with olive oil, salt, garlic powder, and cornstarch.
  3. Spread the coated cauliflower on the baking sheet and roast for 25-30 minutes, flipping halfway.
  4. In a small saucepan, combine lemon juice, lemon zest, maple syrup, soy sauce, garlic powder, and black pepper. Heat until simmering.
  5. Mix a tablespoon of cornstarch with a tablespoon of water, then stir into the simmering sauce to thicken.
  6. Once the cauliflower is crispy, pour the glaze over and toss to coat. Serve immediately.
