Method
 

Step-by-Step Instructions for Taco Lasagna
  1. Preheat your oven to 375°F (190°C). Gather your baking dish and utensils.
  2. In a large skillet, brown 1 pound of ground beef over medium heat, breaking it apart until no pink remains, about 5-7 minutes.
  3. Stir in your taco seasoning and a splash of water. Simmer for 2-3 minutes until thickened.
  4. Add in 1 can of black beans, 1 cup of corn, and 1 can of diced tomatoes with green chiles. Heat for an additional 2 minutes.
  5. In a greased baking dish, layer salsa, tortillas, half of the beef mixture, and cheese. Repeat, finishing with tortillas and cheese.
  6. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
  7. Let the lasagna rest for 5-10 minutes before slicing. Garnish with chopped green onions and cilantro, and serve with sour cream.
