Step-by-Step Instructions for Taco Lasagna
- Preheat your oven to 375°F (190°C). Gather your baking dish and utensils.
- In a large skillet, brown 1 pound of ground beef over medium heat, breaking it apart until no pink remains, about 5-7 minutes.
- Stir in your taco seasoning and a splash of water. Simmer for 2-3 minutes until thickened.
- Add in 1 can of black beans, 1 cup of corn, and 1 can of diced tomatoes with green chiles. Heat for an additional 2 minutes.
- In a greased baking dish, layer salsa, tortillas, half of the beef mixture, and cheese. Repeat, finishing with tortillas and cheese.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
- Let the lasagna rest for 5-10 minutes before slicing. Garnish with chopped green onions and cilantro, and serve with sour cream.
