- Combine chopped spinach, artichoke hearts, cream cheese, and shredded mozzarella in a medium bowl. Mix thoroughly until creamy, then season with salt and pepper to taste. Set aside.
- Heat a non-stick skillet over medium heat for about 2 minutes. Spread butter on one side of each slice of sourdough bread.
- Place one slice of bread butter-side down in the skillet. Spread the creamy filling on the unbuttered side. Top with another slice of bread, butter-side out, pressing gently to secure.
- Grill the sandwich for about 2–3 minutes until golden brown, then carefully flip and grill the other side for another 2–3 minutes until cheese melts and bread is toasted.
