Step-by-Step Instructions for Spinach Artichoke Grilled Cheese
  1. Combine chopped spinach, artichoke hearts, cream cheese, and shredded mozzarella in a medium bowl. Mix thoroughly until creamy, then season with salt and pepper to taste. Set aside.
  2. Heat a non-stick skillet over medium heat for about 2 minutes. Spread butter on one side of each slice of sourdough bread.
  3. Place one slice of bread butter-side down in the skillet. Spread the creamy filling on the unbuttered side. Top with another slice of bread, butter-side out, pressing gently to secure.
  4. Grill the sandwich for about 2–3 minutes until golden brown, then carefully flip and grill the other side for another 2–3 minutes until cheese melts and bread is toasted.
  5. Remove the sandwich from the skillet. Let it sit for a minute, slice diagonally, and serve warm.
