  • 1 pound Turkey Sausage Can substitute with plant-based sausage
  • 6 large Eggs Egg substitutes can reduce cholesterol
  • 1 cup Milk Dairy-free alternatives can be used
  • 1 teaspoon Fresh Thyme Dried thyme can be substituted
  • 1 cup Shredded Cheese Any melty or dairy-free cheese works
  • 2 tablespoons Avocado Oil Can use olive or coconut oil as well

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop the sweet potatoes, onion, green pepper, and garlic into uniform pieces.
  3. Lightly grease a 9×13-inch casserole dish with cooking spray or avocado oil.
  4. In a large skillet, heat 1-2 tablespoons of avocado oil over medium heat. Add chopped onion and green pepper followed by sweet potatoes. Sauté for 8-9 minutes.
  5. Stir in minced garlic during the last 1-2 minutes of cooking time.
  6. Carefully transfer the sautéed vegetable mixture into the greased casserole dish, spreading it evenly.
  7. In the same skillet, add turkey sausage and cook over medium heat until browned and crumbly, about 5-7 minutes.
  8. In a separate bowl, whisk together the eggs, milk, thyme, salt, pepper, and half of the shredded cheese until smooth.
  9. Pour the egg mixture over the sausage and vegetable mixture in the casserole dish. Stir gently to combine.
  10. Place the casserole in the preheated oven and bake for 40-45 minutes until center is firm.
  11. Once baked, let the casserole cool for 5-10 minutes before serving.
