Ingredients
  

For the Sauce
  • 1/4 cup Soy Sauce use low-sodium if preferred
  • 2 tablespoons Oyster Sauce substitute with soy sauce for vegetarian
  • 1 tablespoon Sugar maple syrup or honey can be alternatives
  • 1/2 cup Vegetable Broth chicken broth works for non-vegetarian
For the Stir-Fry
  • 1 tablespoon Avocado Oil or vegetable/canola oil
  • 1 medium Onion yellow or white onion
  • 2 cloves Garlic fresh minced garlic
  • 1 pound Raw Shrimp peeled and deveined
  • 1 teaspoon Salt for pasta water
  • 1/2 teaspoon Black Pepper substitutable with white pepper
For the Veggies
  • 2 cups Baby Bok Choy or spinach/kale
  • 1 cup Carrots julienned or sliced
  • 1/4 cup Green Onions for garnish, can use chives
For the Noodles
  • 8 ounces Lo Mein Noodles or Spaghetti spaghetti or rice noodles can be good substitutes

Method
 

Step-by-Step Instructions for Shrimp Lo Mein
  1. Cook the Lo Mein noodles according to package instructions, about 8–10 minutes in boiling salted water until al dente. Drain and toss with a small drizzle of oil to prevent sticking.
  2. In a large pan or wok, heat 1 tablespoon of avocado oil over medium heat for 1–2 minutes until shimmering.
  3. Add the sliced onions and a sprinkle of sugar to the hot oil. Sauté for 5–7 minutes until golden and caramelized.
  4. Stir in the minced garlic and raw shrimp. Cook for 3–4 minutes until the shrimp turn pink and opaque.
  5. Incorporate the chopped baby bok choy and julienned carrots into the pan. Stir-fry for another 2–3 minutes until tender yet crisp.
  6. Add the cooked noodles, soy sauce, oyster sauce, vegetable broth, and season with salt and black pepper. Toss everything for 2–3 minutes.
  7. Remove from heat and serve hot, garnished with sliced green onions.
