Ingredients

  • 1 lb Ribeye Steak Or sirloin/flank steak as substitute
  • 1/4 cup Soy Sauce Essential for the marinade
  • 2 tbsp Gochujang Paste Substitute with sriracha for less heat
  • 1 tbsp Ginger Fresh preferred, ground ginger is okay
  • 2 tbsp Light Brown Sugar White sugar can be used
  • 2 tbsp Rice Wine Substitute with mirin or omit
  • 2 cloves Garlic Use fresh for best flavor
  • 1/2 tsp Black Pepper Freshly ground recommended
  • 1/2 cup Grated Apple Omitted for less sweetness
  • 1 tbsp Sesame Oil Essential for authentic taste
For the Sandwich Assembly
  • 1 cup Bell Peppers (Red and Yellow) Substitute with other sweet varieties or omit
  • 4 slices Bread (Thick Slices) Ciabatta or sourdough recommended
  • 2 tbsp Salted Butter Can use unsalted butter
  • 4 slices Cheddar Cheese Can substitute with Monterey Jack
  • 1/4 cup Red Onion Can be omitted
  • 1 jalapeño Jalapenos Skip or use pickled for milder heat
  • 2 stalks Spring Onions (Scallions) Optional
For the Garlic Mayo
  • 1/2 cup Mayonnaise Any creamy condiment can be used
  • 1 tbsp Sweet Chili Sauce Optional for sweetness
For Garnish
  • 1 tbsp Sesame Seeds Optional, but adds flavor

Preparation
  1. Step 1: Prepare the Steak: Place the ribeye steak in the freezer for 30 minutes, then slice into thin strips.
  2. Step 2: Marinate the Steak: Whisk together soy sauce, gochujang, ginger, brown sugar, rice wine, garlic, and pepper. Coat the steak and marinate for 30 minutes at room temperature.
  3. Step 3: Cook the Steak: Heat oil in a skillet, add marinated steak strips, cook for 4-5 minutes until browned, then let rest.
  4. Step 4: Sauté the Peppers: In the same skillet, sauté sliced bell peppers over medium heat for 2-3 minutes.
  5. Step 5: Assemble the Sandwich: Butter one side of each slice of bread. Layer with peppers, steak, sesame seeds, cheddar, onion, jalapeños, and scallions.
  6. Step 6: Toast the Sandwiches: Cook assembled sandwiches in the skillet for 2-3 minutes per side until golden brown.
  7. Step 7: Prepare the Garlic Mayo: Mix mayonnaise with minced garlic and add sweet chili sauce if desired.
  8. Step 8: Serve and Enjoy: Drizzle garlic mayo on toasted sandwiches, cut in half, and serve with sides.
