Step-by-Step Instructions
  1. Dice the chicken thighs into bite-sized pieces and toss with Cajun seasoning in a bowl.
  2. In a Dutch oven, heat olive oil and cook the chicken for 5-7 minutes until browned.
  3. Sauté the sliced sausage in the same pot for 3-4 minutes until browned.
  4. Add diced onion, bell pepper, and celery to the pot; sauté for 4-5 minutes.
  5. Lower heat, stir in rice for 1-2 minutes, then add tomatoes, broth, and bay leaf. Simmer for 7-8 minutes.
  6. Fold in the chicken, sausage, and shrimp; cover and rest for 4-5 minutes until shrimp are cooked.
  7. Remove the bay leaf, garnish with green onions and parsley, and serve.
