- In a food processor, combine honey, chipotle chilies, apple cider vinegar, soy sauce, garlic, and cumin to create a flavorful marinade. Blend until smooth.
- Place the bite-sized chicken pieces in a bowl and pour half of the marinade over them. Cover and refrigerate for at least 20 minutes, or up to overnight.
- While the chicken marinates, soak wooden skewers in water for at least 30 minutes.
- After marinating, thread the chicken pieces onto the soaked skewers.
- Preheat your grill to medium-high heat, around 375°F to 400°F.
- Place the chicken skewers on the grill and grill each side for about 2-5 minutes until charred and cooked through.
- Remove from the grill and let them rest for a minute. Serve alongside the remaining marinade.
