Ingredients
  

For the Marinade
  • 1/4 cup Honey Substitute with maple syrup for a different flavor.
  • 2 tbsp Chipotle Chilies in Adobo Sauce Adjust quantity based on desired heat level.
  • 2 tbsp Apple Cider Vinegar Or use lime juice for a citrusy touch.
  • 2 tbsp Soy Sauce Ensure it’s gluten-free if necessary.
  • 2 cloves Garlic Minced fresh garlic is preferable.
  • 1 tsp Cumin Can be omitted if desired.
For the Chicken Skewers
  • 1 lb Chicken Breasts or Thighs Cut into bite-sized pieces.

Method
 

Directions
  1. In a food processor, combine honey, chipotle chilies, apple cider vinegar, soy sauce, garlic, and cumin to create a flavorful marinade. Blend until smooth.
  2. Place the bite-sized chicken pieces in a bowl and pour half of the marinade over them. Cover and refrigerate for at least 20 minutes, or up to overnight.
  3. While the chicken marinates, soak wooden skewers in water for at least 30 minutes.
  4. After marinating, thread the chicken pieces onto the soaked skewers.
  5. Preheat your grill to medium-high heat, around 375°F to 400°F.
  6. Place the chicken skewers on the grill and grill each side for about 2-5 minutes until charred and cooked through.
  7. Remove from the grill and let them rest for a minute. Serve alongside the remaining marinade.
