Step-by-Step Instructions
- Begin by slicing the chicken breasts into 1-inch strips and preparing the vibrant bell peppers and onion. Mince the garlic cloves to release their aromatic flavor. Set these ingredients aside.
- Pour half of the salsa into the bottom of your crockpot, creating a flavorful base.
- Add half of the sliced red, yellow, and green bell peppers along with half of the sliced onion atop the salsa layer. Sprinkle the minced garlic over the vegetables.
- Gently lay the sliced chicken strips evenly on top of the vegetable layer.
- Sprinkle your fajita seasoning packet and chili powder evenly over the chicken strips. Massage the seasoning into the chicken.
- Pour the remaining salsa over the seasoned chicken, followed by the rest of the bell peppers and onion. Squeeze the lime juice on top.
- Cover your crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, use two forks to shred the chicken directly in the crockpot, stirring it into the mix of vegetables and juices.
- Switch the setting to warm once the chicken has been shredded and mixed with the vegetables.

Notes
Avoid dry chicken by checking doneness early; it's better to start checking at 5 hours on low. Always layer your ingredients starting with salsa, then veggies, followed by chicken to ensure juiciness.
