- Melt 1 tablespoon of butter in a skillet over low heat. Add onion and sweat gently for 3 to 5 minutes until translucent.
- Increase heat to medium-high and add ground sirloin, seasoning with salt and pepper. Sauté for 5 to 7 minutes until browned.
- Stir in diced tomatoes and chopped celery. Cover and simmer for 15 to 20 minutes.
- Remove from heat and stir in remaining butter. Adjust seasoning.
- Cook pasta in a pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
- Drain pasta and add to the sauce, tossing to combine. Add reserved pasta water if needed. Serve hot.
