- Wash and chop the bok choy into bite-sized pieces, mince the garlic and ginger.
- Heat vegetable oil over medium-high heat in a skillet.
- Add minced garlic and ginger, stir for 30 seconds until fragrant.
- Toss in the shrimp and stir-fry for 2-3 minutes until pink and opaque.
- Add chopped bok choy and cook for another 2-3 minutes until slightly wilted.
- Drizzle in soy sauce and oyster sauce, stir well and let bubble for 1 minute.
- Add sesame oil, season with salt and pepper, stir and cook for another minute.
- Remove from heat, serve over rice or noodles, and garnish with green onions.
