  • 1 lb shrimp peeled and deveined
  • 1 head bok choy chopped into bite-sized pieces
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 3 tbsp soy sauce low-sodium preferred
  • 1 tbsp oyster sauce optional
  • 2 tbsp vegetable oil for frying
  • 1 tbsp sesame oil for flavor
  • to taste salt for seasoning
  • to taste pepper for seasoning
  • 2 stalks green onion chopped for garnish
  • for serving cooked rice or noodles

Method
 

Step-by-Step Instructions
  1. Wash and chop the bok choy into bite-sized pieces, mince the garlic and ginger.
  2. Heat vegetable oil over medium-high heat in a skillet.
  3. Add minced garlic and ginger, stir for 30 seconds until fragrant.
  4. Toss in the shrimp and stir-fry for 2-3 minutes until pink and opaque.
  5. Add chopped bok choy and cook for another 2-3 minutes until slightly wilted.
  6. Drizzle in soy sauce and oyster sauce, stir well and let bubble for 1 minute.
  7. Add sesame oil, season with salt and pepper, stir and cook for another minute.
  8. Remove from heat, serve over rice or noodles, and garnish with green onions.
