Ingredients
  

For the Meatballs
  • 1 lb Ground Beef Substitute with ground turkey or chicken for a lighter option.
  • 1 cup Breadcrumbs Crushed gluten-free crackers for gluten-free version.
  • 1 Egg Use a flax egg for a vegan option.
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Thyme Fresh thyme can be used.
For the Gravy
  • 2 tbsp Olive Oil
  • 2 cups Beef Broth Vegetable broth or red wine can be used.
  • 2 tbsp Cornstarch
For the Mashed Potatoes
  • 2 lbs Potatoes (Yukon Gold)
  • 1/2 cup Milk Non-dairy milk for lactose-free option.
  • 4 tbsp Butter Vegan butter can replace it.
  • 1/4 cup Fresh Parsley (chopped)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently.
  3. Roll the mixture into 1-inch meatballs and place them on the baking sheet. Bake for 20 minutes.
  4. Heat olive oil in a skillet over medium heat. Sauté onions and garlic for 5-7 minutes.
  5. Add beef broth and Worcestershire sauce to the skillet, simmer and gradually whisk in cornstarch until thickened.
  6. In a pot, boil chopped Yukon Gold potatoes and garlic until fork-tender. Drain and evaporate excess moisture.
  7. Mash the potatoes with milk, butter, salt, pepper, and chopped parsley until smooth.
  8. Toss the baked meatballs in the gravy. Serve over mashed potatoes, garnished with parsley.
