Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Peel and dice the sweet potatoes into bite-sized cubes, then place them in a mixing bowl.
  3. Drizzle the diced sweet potatoes with olive oil, salt, and pepper. Toss until well coated.
  4. Spread the sweet potatoes on the baking sheet and roast for 25-30 minutes, stirring halfway through.
  5. Heat a tablespoon of olive oil in a skillet over medium heat. Sauté sliced red onions and bell peppers for 5-7 minutes.
  6. In a large bowl, combine roasted sweet potatoes, sautéed onions and peppers, and fresh spinach or arugula.
  7. Crumble feta cheese over the salad and drizzle with balsamic vinegar. Gently toss until combined.
