- Start by rinsing 1 cup of fresh raspberries and 1 cup of pineapple chunks under cool water. If using frozen raspberries, allow to thaw slightly.
- In a high-speed blender, combine the prepared raspberries, pineapple chunks, 1 cup of coconut cream, 1 cup of coconut water, the juice of one fresh lime, and 2 tablespoons of honey. Blend on medium-high for about 1 minute, or until smooth.
- Once your base is smooth, add about 2 cups of ice cubes and 1 ounce of white rum if you’re opting for that. Blend for an additional 30-45 seconds.
- Taste to check for sweetness; adjust with honey or lime juice as desired.
