Step-by-Step Instructions for Peanut Butter & Jelly Banana Bread
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it with cooking spray or butter and lining the bottom with parchment paper.
- In a large mixing bowl, mash the ripe bananas until mostly smooth with a few small lumps remaining.
- Add the creamy peanut butter, vegetable oil, eggs, brown sugar, granulated sugar, and vanilla extract to the mashed bananas and whisk until combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour half of the batter into the loaf pan, add dollops of half of the strawberry jam, and swirl in gently. Repeat with the remaining batter and jam.
- If desired, sprinkle chopped peanuts over the top of the batter.
- Bake for 50–60 minutes, checking for doneness with a toothpick.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
