For the Topping
  • 1.25 cups Shredded Mozzarella Cheese Try gouda for a different flavor.
  • 0.25 cups Grated Parmesan Cheese Nutritional yeast can be used for a vegan version.
  • Fresh Basil or Parsley Other herbs can be substituted based on availability.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat, add diced onion, and sauté for 4-5 minutes until translucent.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add crushed tomatoes, dried oregano, dried basil, salt, and pepper to the skillet; stir and let simmer for 5 minutes.
  5. Gently fold in drained cannellini beans and cook for an additional 2-3 minutes.
  6. Transfer the mixture into a greased 9x9 inch baking dish, and sprinkle shredded mozzarella and grated Parmesan cheese over the top.
  7. Bake for 20-25 minutes until cheese is melted, bubbling, and golden brown.
  8. Let cool slightly, garnish with fresh basil or parsley if desired, and serve warm.
