Preparation and Cooking Steps
- Season the roast generously with salt, black pepper, onion powder, and garlic powder. Rub the seasoning into the meat and let it rest for about 15 minutes.
- In a skillet, heat oil over medium-high heat and sear the roast for 4-5 minutes on each side until browned. Remove and set aside.
- Layer sliced onions evenly in the slow cooker. Place the seared roast on top of the onions.
- Pour the beef broth and soy sauce over the roast.
- Sprinkle thyme, parsley, and additional black pepper over the roast.
- Cover the slow cooker and cook on low for 8-10 hours.
- Remove the roast, shred it with two forks and mix it back with the onion gravy. Serve warm.
