Method
 

Preparation and Cooking Steps
  1. Season the roast generously with salt, black pepper, onion powder, and garlic powder. Rub the seasoning into the meat and let it rest for about 15 minutes.
  2. In a skillet, heat oil over medium-high heat and sear the roast for 4-5 minutes on each side until browned. Remove and set aside.
  3. Layer sliced onions evenly in the slow cooker. Place the seared roast on top of the onions.
  4. Pour the beef broth and soy sauce over the roast.
  5. Sprinkle thyme, parsley, and additional black pepper over the roast.
  6. Cover the slow cooker and cook on low for 8-10 hours.
  7. Remove the roast, shred it with two forks and mix it back with the onion gravy. Serve warm.
