Ingredients
  

For the Oats
  • 1 cup Gluten-Free Oats
  • 1 cup Almond Milk or any milk of your choice
  • 2 tablespoons Chia Seeds can be omitted
  • 1 scoop Vanilla Protein Powder optional
  • 2 tablespoons Lemon Juice adjust to taste
  • 1 teaspoon Lemon Zest fresh is best
  • 2 tablespoons Maple Syrup or honey/agave syrup
For the Cheesecake Layer
  • 1 cup White Chocolate Chips can be omitted
  • 4 ounces Cream Cheese can use low-fat or vegan options
  • 1 cup Greek Yogurt or dairy-free alternative
For Garnishing
  • 1/4 cup Graham Wafer Pieces or crushed nuts/granola
  • 2 pieces Fresh Lemon Wedges for garnish
  • 2 tablespoons Shredded Coconut optional

Method
 

Base Preparation
  1. In a medium bowl or jar, combine gluten-free oats, almond milk, chia seeds, vanilla protein powder, lemon juice, lemon zest, and maple syrup. Stir well for 5 minutes.
  2. Cover the bowl or jar with a lid or plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Cheesecake Layer Preparation
  1. Melt white chocolate chips in a microwave-safe bowl, heating in 30-second intervals until smooth.
  2. Blend in room temperature cream cheese and Greek yogurt until combined, about 4-5 minutes.
Assembling the Dish
  1. Take refrigerated oats out of the fridge and pour the cheesecake mixture over them, swirling to create a marbled effect.
  2. Cover again and return to the fridge to meld flavors, ideally overnight.
Garnishing
  1. When ready to serve, add toppings: sprinkle graham wafer pieces, shredded coconut, and fresh lemon wedges on top.
