Method
 

Cooking Instructions
  1. Slice ripe bananas into ⅓ inch thick medallions and set aside.
  2. Whisk together oat or almond milk, maple syrup, baking powder, vanilla extract, and cinnamon in a bowl until smooth.
  3. Gradually add flour to the wet mixture, stirring until just combined to form a thick batter.
  4. Heat a non-stick skillet over medium heat for 2 minutes and melt the butter.
  5. Dip banana slices into the pancake batter, then place in the skillet, avoiding overcrowding.
  6. Fry for 2 to 3 minutes until golden brown, then flip and cook the other side for an additional 2 to 3 minutes.
  7. Drain excess oil on a paper towel-lined plate after cooking.
