Instructions
  1. In a large skillet over medium heat, melt 2 tablespoons of butter. Add thinly sliced yellow or Vidalia onions, seasoning them with a pinch of kosher salt. Cover and cook for 3-5 minutes. Reduce heat to low, stirring occasionally for about 20-25 minutes until onions turn deep golden brown.
  2. Transfer the caramelized onions to a bowl. Mix in 1 cup of grated Gruyère cheese. Set aside while preparing the bread.
  3. Take two slices of bread and place a generous amount of the cheese-onion mixture on one slice. Top with another slice of bread and press down gently.
  4. In the same skillet, melt the remaining butter over medium heat. Grill the assembled sandwiches for about 3-4 minutes on each side until golden brown and cheese is melted.
  5. Remove from skillet, cool slightly, and slice in half. Serve warm, perhaps alongside a light salad.
