- In a large skillet over medium heat, melt 2 tablespoons of butter. Add thinly sliced yellow or Vidalia onions, seasoning them with a pinch of kosher salt. Cover and cook for 3-5 minutes. Reduce heat to low, stirring occasionally for about 20-25 minutes until onions turn deep golden brown.
- Transfer the caramelized onions to a bowl. Mix in 1 cup of grated Gruyère cheese. Set aside while preparing the bread.
- Take two slices of bread and place a generous amount of the cheese-onion mixture on one slice. Top with another slice of bread and press down gently.
- In the same skillet, melt the remaining butter over medium heat. Grill the assembled sandwiches for about 3-4 minutes on each side until golden brown and cheese is melted.
- Remove from skillet, cool slightly, and slice in half. Serve warm, perhaps alongside a light salad.
