  • 1 cup Unsalted Butter or dairy-free butter
  • 1 cup Water
  • 1 cup Unsweet Dark Cocoa Powder unsweetened preferred
  • 1.5 cups All-Purpose Flour or gluten-free flour mix
  • 1 cup Light Brown Sugar can substitute with granulated sugar
  • 1 teaspoon Espresso Powder optional
  • 1 teaspoon Baking Soda ensure it's fresh
  • 1 teaspoon Fine Grain Sea Salt can use regular salt
  • 1 cup Buttermilk or dairy-free milk with vinegar
  • 2 large Eggs or flax eggs for vegan
  • 1 teaspoon Vanilla Extract
For the Mousse and Filling
  • 1 cup Heavy Cream or coconut cream
  • 1 cup Semisweet Chocolate Chips or dark chocolate chips
  • 8 ounces Cream Cheese or dairy-free cream cheese
  • 4 ounces White Chocolate or dairy-free white chocolate
  • 1 cup Confectioners' Sugar can be omitted
For the Ganache and Decoration
  • 1 tablespoon Sunflower Oil or any neutral oil
  • 1 cup Milk or plant-based milk
  • 1 cup Rolled Cookie Wafer optional decoration

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a saucepan, melt butter, water, and cocoa powder over medium-low heat. Let cool.
  3. Whisk together flour, brown sugar, baking soda, salt, and espresso powder in a bowl.
  4. Mix melted butter mixture with dry ingredients until just combined.
  5. Add buttermilk, eggs, and vanilla; mix until smooth.
  6. Divide batter between the pans and bake for 30 to 35 minutes.
  7. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
Mousse and Filling
  1. Whip heavy cream until stiff peaks form, then fold in chocolate chips.
  2. Blend cream cheese, white chocolate, sugar, and butter until smooth.
  3. Layer mousse and cream cheese filling between cooled cake layers.
Ganache and Decoration
  1. Melt chocolate chips, heavy cream, and oil in a saucepan, then cool.
  2. Pour ganache over assembled cake and let set for 20 minutes.
  3. Decorate with frosting, truffles, and cookie wafers if desired.
