- In a blender, combine the eggs, maple syrup, baking soda, baking powder, and yogurt. Blend for about 30 seconds until fluffy and creamy.
- Peel and chop apples into small pieces. Add them to the blender and pulse briefly to incorporate without over-blending.
- Pour the batter into a mixing bowl and gently stir in the oats, vanilla, and cinnamon. Allow the batter to rest for 2 minutes.
- Heat a non-stick pan over medium heat and grease it lightly. Pour 1/4 cup of batter for each pancake and cook for 2-3 minutes.
- When bubbles form on the surface, flip the pancakes and cook for another 2-3 minutes until golden brown.
- Serve immediately while warm, optionally topping with fresh fruit, nut butter, or additional maple syrup.
