For the Falafel
  • 2 cups Canned Chickpeas well-rinsed
  • 1 cup Fresh Parsley chopped
  • 1 cup Fresh Cilantro optional
  • 3 cloves Garlic finely minced
  • 1 small Onion roughly chopped
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander optional
  • 1 teaspoon Baking Powder fresh
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 2 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Tahini or sunflower seed butter for nut-free
  • 2 tablespoons Lemon Juice fresh
For the Tzatziki Sauce
  • 1 cup Greek Yogurt or dairy-free yogurt for vegan option
  • 1 small Cucumber grated and moisture squeezed out
  • 1 clove Garlic minced
  • 1 tablespoon Lemon Juice to taste
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and pepper. Pulse until slightly chunky.
  3. Add olive oil, tahini, and lemon juice to the processor and blend until a cohesive mixture forms. Adjust consistency if necessary.
  4. Shape the mixture into balls or patties, about 1-2 inches wide, and place them on the baking sheet.
  5. Bake in the preheated oven for 20-25 minutes, flipping halfway through for even browning.
  6. While the falafel bakes, mix Greek yogurt, grated cucumber, garlic, lemon juice, salt, and pepper in a bowl to prepare the tzatziki sauce.
  7. Serve the baked falafel warm with tzatziki sauce, pita bread, and fresh veggies.
