  • 2 medium Zucchini sliced lengthwise
  • 1 teaspoon Salt sea salt or kosher salt
  • 1 tablespoon Olive Oil or avocado oil
For the Toppings
  • 4 ounces Goat Cheese crumbled
  • 1 cup Fresh Basil chopped
  • 2 tablespoons Honey

Method
 

Step-by-Step Instructions
  1. Slice the zucchini lengthwise into 1/2-inch pieces and sprinkle salt over them. Allow to drain for about 20 minutes.
  2. Pat each zucchini slice dry with a cloth or paper towel to remove excess moisture.
  3. Preheat the grill to medium-high heat around 400°F (200°C) and brush zucchini slices with olive oil.
  4. Grill the zucchini for 10-15 minutes, flipping them halfway through until they are tender and have grill marks.
  5. Remove zucchini from the grill, crumble goat cheese over the top, and sprinkle with fresh basil.
  6. Drizzle honey over the dish and season with salt and pepper to taste before serving.
