  1. In a small bowl, combine 1/2 cup ketchup, 1-2 teaspoons chopped chipotle chile, 1 tablespoon adobo sauce, and 1 teaspoon balsamic vinegar. Stir until smooth, then set aside.
  2. Take two slices of Italian or white bread and layer on 1 slice of white American cheese, followed by 1-2 slices of leftover meatloaf, another slice of cheese, and cap with a second slice of bread.
  3. Spread an amount of butter on the outer sides of both slices of bread to ensure a golden and crispy exterior.
