  • 2 tablespoons sake or white wine as a replacement
  • 2 tablespoons brown sugar add more for a sweeter glaze
  • 1 tablespoon fresh ginger grated for maximum flavor
  • 2 cloves minced garlic fresh for best results
  • 1/2 teaspoon black pepper adjust according to heat preference
Chicken Skewers
  • 1 pound boneless skinless chicken thighs chicken breasts can also be used
  • 4 whole green onions cut into 2-inch pieces
  • 8 pieces wooden skewers soak in water before grilling

Method
 

Preparation Steps
  1. Cut chicken thighs into 1-inch pieces and set aside.
  2. In a medium bowl, whisk together soy sauce, mirin, sake, brown sugar, ginger, garlic, and black pepper until dissolved.
  3. Add chicken pieces to marinade, cover, and refrigerate for at least 30 minutes.
  4. Preheat grill to medium-high heat (375°F to 400°F).
  5. Thread marinated chicken and green onions onto soaked skewers.
  6. Grill skewers for 5-7 minutes on each side until cooked through, brushing with marinade as needed.
  7. Remove from grill, let rest for a few minutes, and serve garnished with green onions.
