Step-by-Step Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 2 sliced onions and cook for 10-12 minutes until they soften and turn golden brown.
- In the same skillet, add 1 pound of ground beef, breaking it into pieces. Cook for 5-7 minutes until browned and cooked through.
- Rinse 1 cup of long-grain white rice under cold water until the water runs clear.
- In a large mixing bowl, combine the beef and onion mixture with the rinsed rice and 2 cups of beef broth. Stir well.
- Transfer the mixture to a greased 9x13 inch baking dish. Cover tightly with aluminum foil and bake at 350°F (175°C) for 30 minutes.
- Remove the foil and sprinkle 1 cup of shredded Swiss cheese over the top. Return to oven and bake for another 10-15 minutes until cheese is melted.
- Scatter 1 cup of crispy fried onions on top and bake for another 5 minutes until golden brown.

Notes
Allow onions to cook slowly until golden brown for sweetness. You can prepare the casserole a day in advance.
