- Wash the fresh strawberries under cool running water and remove the green tops. Slice the strawberries into even pieces.
- In a mixing bowl, whip together softened cream cheese and powdered sugar until light and fluffy, about 2-3 minutes. Gradually add the heavy whipping cream and continue mixing until stiff peaks form.
- Spread the cream mixture evenly over 8 slices of bread. Arrange the sliced strawberries on half of the slices and top with more cream before placing the other slices on top.
- Score a line in the middle of the sandwiches with a knife, wrap them tightly, and refrigerate for at least 2 hours.
- Cut the sandwiches diagonally along the pre-scored line, and serve arranged on a platter.
