- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine chopped fresh spinach with shredded Parmesan cheese. Season with salt, pepper, and any optional spices. Stir until well mixed.
- On a lightly floured surface, roll out the thawed puff pastry into a rectangle about ⅛ inch thick.
- Using a sharp knife, slice the rolled pastry into 1-inch-wide strips.
- At one end of each pastry strip, place a spoonful of the spinach and cheese filling. Fold the strip over the filling and twist to form a spiral.
- Beat an egg in a bowl and brush it over the twisted pastries.
- Place the pastries on the prepared baking sheet and bake for 15-20 minutes until puffed and golden brown.
- Cool slightly on a wire rack before serving. Enjoy warm or at room temperature.
