Ingredients
  

For the Noodles
  • 8 oz Rice Noodles soba or udon can be substituted
For the Protein
  • 1 lb Chicken Breast replace with tofu or tempeh for vegetarian option
For Sautéing
  • 2 tbsp Vegetable Oil substitute sesame oil for more flavor
For the Vegetables
  • 2 cups Mixed Vegetables bell peppers, carrots, and broccoli
For the Sauce
  • 1/2 cup Creamy Peanut Butter use almond or sunbutter if nut-free
  • 3 tbsp Soy Sauce opt for tamari to make it gluten-free
  • 2 tbsp Honey substitute with maple syrup for vegan
  • 1 tbsp Lime Juice lemon juice is a good substitute
  • 2 cloves Garlic fresh garlic recommended
  • 1 inch Ginger fresh ginger provides best taste
  • 1/2 tsp Red Pepper Flakes adjust to taste
For Garnishing
  • 2 tbsp Green Onions chopped
  • 2 tbsp Crushed Peanuts

Method
 

Instructions
  1. Cook the noodles in boiling water for 4-6 minutes until al dente. Drain and rinse under cold water.
  2. Whisk together peanut butter, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes until smooth.
  3. Heat oil in a skillet and cook chicken for 5-7 minutes until golden and cooked through.
  4. Add mixed vegetables to the skillet and stir-fry for 3-4 minutes until vibrant and tender.
  5. Combine the cooked noodles and sauce in the skillet, tossing until heated through and well coated.
  6. Serve garnished with green onions and crushed peanuts. Enjoy!
