Step-by-Step Instructions
  1. In a large mixing bowl, add the coleslaw mix, rinsed black beans, corn, diced jalapeño, chopped red bell pepper, sliced green onions, and fresh cilantro. Sprinkle in the taco seasoning and ground cumin, then toss everything together until well mixed and colorful.
  2. In a separate bowl, whisk together the sour cream, mayonnaise, fresh lime juice, and chipotle sauce until smooth. Adjust consistency with water or lime juice as needed.
  3. Pour the creamy dressing over the salad mixture and gently fold the ingredients to coat them evenly.
