  • 1/4 cup Oil high smoke point oil like vegetable or canola

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Coarsely grate the sweet potatoes, transfer them to a bowl of cold water, and swirl to release excess starch.
  3. Drain and squeeze out as much moisture as possible from the grated sweet potatoes.
  4. In a large bowl, combine the dried sweet potatoes with chopped onion, eggs, flour, salt, and pepper, mixing until cohesive.
  5. Heat oil in a skillet over medium heat for about 3 minutes until shimmering.
  6. Scoop the mixture into the skillet, flattening each scoop into a patty.
  7. Fry patties for 3-4 minutes per side until golden brown and crispy.
  8. Transfer to a baking sheet and bake in the oven for 10-12 minutes for extra crispiness.
  9. Serve hot, optionally garnished with sour cream or fresh herbs.
