Step-by-Step Instructions

  2. Wash and dry zucchini, cut into 1/4-inch matchsticks and set aside.
  3. Combine Panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, dry parsley, salt, and pepper in a shallow dish.
  4. In another dish, crack and beat your eggs until pale and frothy.
  5. Coat each zucchini matchstick with flour, then dip in the egg wash, and roll in the breadcrumb mixture.
  6. Arrange coated zucchini fries on the baking sheet and bake for 20 minutes, flipping halfway.
