- Cut fresh mozzarella cheese into sticks, about 1/2 inch thick and 3 inches long. Freeze on a baking sheet for 30 minutes.
- Set up a dredging station: place flour in one dish, beaten eggs in another, and mix panko breadcrumbs with herbs and paprika in a third dish.
- Dredge each frozen cheese stick in flour, dip in egg, and coat with panko mixture, pressing firmly to adhere.
- Heat vegetable oil to 180°C (350°F) in a deep fryer or pot. Ensure accurate temperature for non-greasy results.
- Fry mozzarella sticks in small batches for 2-3 minutes until golden-brown and cheese is melting. Avoid overcrowding.
- Remove fried sticks with a slotted spoon and drain on paper towels. Serve immediately with dipping sauces.
