Instructions
- Cook rotini pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
- In a mixing bowl, combine mayonnaise, dill pickle juice, salt, and pepper. Whisk until smooth.
- Add rotini, dill pickles, Colby Jack cheese, and onions to the bowl. Stir gently to combine.
- Cover and refrigerate for at least 2 hours to chill.
- Before serving, stir the salad and adjust dressing with more dill pickle juice or mayonnaise if needed.
