  • 8 ounces Rotini Pasta Can substitute with farfalle or penne.
  • 1 cup Dill Pickles Diced.
  • 1 cup Colby Jack Cheese Shredded.
  • 1/2 cup Onions Chopped; can substitute with green onions or chives.
For the Dressing
  • 1/2 cup Mayonnaise Can substitute with light mayonnaise or Greek yogurt.
  • 1/4 cup Dill Pickle Juice Adjust to taste.

Method
 

Instructions
  1. Cook rotini pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a mixing bowl, combine mayonnaise, dill pickle juice, salt, and pepper. Whisk until smooth.
  3. Add rotini, dill pickles, Colby Jack cheese, and onions to the bowl. Stir gently to combine.
  4. Cover and refrigerate for at least 2 hours to chill.
  5. Before serving, stir the salad and adjust dressing with more dill pickle juice or mayonnaise if needed.
