Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Place the sweet potatoes on a baking sheet and pierce each with a fork. Bake for 45-50 minutes until soft.
  3. Let the sweet potatoes cool for about 10 minutes. Cut each in half lengthwise and scoop out the flesh into a bowl.
  4. Melt 2 tablespoons of butter in a skillet, add diced apple and cranberries, sprinkle nutmeg and cinnamon, and sauté for 5-7 minutes.
  5. Mix in 1 tablespoon of maple syrup with the sautéed filling and mash the sweet potato flesh with half of the mixture.
  6. Spoon the mixture back into each potato skin, topping them with remaining filling.
  7. Bake the filled sweet potatoes in the oven for 10-12 minutes until heated through.
