- Preheat your oven to 400°F (200°C).
- Place the sweet potatoes on a baking sheet and pierce each with a fork. Bake for 45-50 minutes until soft.
- Let the sweet potatoes cool for about 10 minutes. Cut each in half lengthwise and scoop out the flesh into a bowl.
- Melt 2 tablespoons of butter in a skillet, add diced apple and cranberries, sprinkle nutmeg and cinnamon, and sauté for 5-7 minutes.
- Mix in 1 tablespoon of maple syrup with the sautéed filling and mash the sweet potato flesh with half of the mixture.
- Spoon the mixture back into each potato skin, topping them with remaining filling.
- Bake the filled sweet potatoes in the oven for 10-12 minutes until heated through.
