  • 1 medium Red bell pepper diced
  • 6 slices Bacon cooked until crispy, omit for vegetarian option
  • 1/4 cup Fresh cilantro garnish, can substitute with parsley
  • to taste Salt

For the Dressing
  • 1 cup Basil pesto store-bought or homemade
  • 1/2 cup Greek yogurt can replace with sour cream or more mayo
  • 1/2 cup Mayonnaise vegan mayo can be used
  • 2 tablespoons Lime juice freshly squeezed, lemon juice can substitute

Method
 

Step-by-Step Instructions
  1. Cook the pasta by bringing a large pot of salted water to a rolling boil. Add the orecchiette pasta and cook according to package instructions (9-11 minutes) until al dente. Drain and rinse under cold water.
  2. Prepare the dressing by whisking together basil pesto, Greek yogurt, mayonnaise, and lime juice until smooth. Adjust consistency if too thick.
  3. Combine the cooled pasta, corn, red bell pepper, and bacon in a large bowl. Gently fold together until evenly mixed.
  4. Mix in the dressing, folding until ingredients are coated. Season with salt and pepper as needed.
  5. Serve in a bowl or on plates, garnished with cilantro. Chill for 30 minutes before serving if desired.
