  • 1 pound chicken breast can use chicken thighs for juiciness
  • skewers wooden or metal; soak wooden skewers for 30 minutes

Method
 

Preparation Steps
  1. In a bowl, combine the coconut milk, lime juice, honey, minced garlic, and grated ginger. Whisk until smooth.
  2. Cut the chicken breast into 1-inch cubes and add to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. Preheat the grill to medium-high heat (around 400°F/200°C).
  4. Thread marinated chicken onto the skewers, leaving gaps between pieces for even cooking.
  5. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is golden-brown and reaches an internal temperature of 165°F (75°C).
  6. Remove from grill and allow to rest for a few minutes before serving with fresh lime wedges.
