Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef lean to medium fat (80/20)
  • 0.5 lb Ground Pork can substitute with ground turkey
  • 1 cup Breadcrumbs opt for gluten-free if needed
  • 0.5 cup Milk use broth for added flavor if preferred
  • 1 Onion large, finely chopped
  • 3 Garlic cloves, minced
  • 2 Eggs large
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Dijon Mustard
  • 1 tbsp Balsamic Vinegar
  • 2 tbsp Fresh Parsley chopped
  • 1 tsp Thyme fresh or ½ tsp dried
  • to taste Salt
  • to taste Black Pepper
  • for sautéing Olive Oil
For the Mushroom Gravy
  • 3 tbsp Unsalted Butter
  • 8 oz Mushrooms sliced
  • 2 tbsp All-purpose Flour
  • 2 cups Beef Stock or chicken/vegetable stock
  • 1 tbsp Soy Sauce optional
  • 2 tbsp Heavy Cream optional
  • 0.5 tsp Additional Thyme Leaves

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until softened, about 4-5 minutes.
  3. In a mixing bowl, soak breadcrumbs in milk for about 5 minutes.
  4. In a large bowl, mix ground beef, ground pork, sautéed onions, garlic, soaked breadcrumbs, eggs, Worcestershire sauce, Dijon mustard, balsamic vinegar, parsley, thyme, salt, and pepper until combined.
  5. Transfer the mixture to a lined baking sheet or loaf pan, shaping it into a loaf.
  6. Bake the meatloaf in the preheated oven for 50-70 minutes, until the internal temperature reaches 160°F (71°C).
  7. Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
Gravy
  1. Melt butter in the same skillet over medium heat. Add mushrooms and sauté until golden, around 5-7 minutes.
  2. Sprinkle flour over cooked mushrooms and stir for 1 minute. Gradually whisk in beef stock and bring to a simmer.
  3. Add soy sauce, heavy cream, thyme, salt, and black pepper. Simmer gently for 8-10 minutes, stirring frequently.
  4. Slice the meatloaf and serve with mushroom gravy on top.
