Preparation
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until softened, about 4-5 minutes.
- In a mixing bowl, soak breadcrumbs in milk for about 5 minutes.
- In a large bowl, mix ground beef, ground pork, sautéed onions, garlic, soaked breadcrumbs, eggs, Worcestershire sauce, Dijon mustard, balsamic vinegar, parsley, thyme, salt, and pepper until combined.
- Transfer the mixture to a lined baking sheet or loaf pan, shaping it into a loaf.
- Bake the meatloaf in the preheated oven for 50-70 minutes, until the internal temperature reaches 160°F (71°C).
- Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.

- Melt butter in the same skillet over medium heat. Add mushrooms and sauté until golden, around 5-7 minutes.
- Sprinkle flour over cooked mushrooms and stir for 1 minute. Gradually whisk in beef stock and bring to a simmer.
- Add soy sauce, heavy cream, thyme, salt, and black pepper. Simmer gently for 8-10 minutes, stirring frequently.

Notes
Letting the meatloaf rest is crucial for juicy slices. Use a meat thermometer to ensure it reaches 160°F (71°C).
