Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the roasted sweet potato in a large mixing bowl until completely smooth.
  3. Add in maple syrup or honey, an egg (or flax egg for vegan), and vanilla extract. Mix until smooth.
  4. Stir in old-fashioned oats, almond flour, baking powder, cinnamon, nutmeg, and ginger.
  5. Scoop out portions of dough and place on the baking sheet, flattening each slightly.
  6. Bake for 12-15 minutes until set around the edges and lightly golden on top.
