- In a mixing bowl, combine the diced yellow peaches, finely chopped sweet red bell pepper, red onion, and green onions. Add freshly chopped cilantro, lime juice, and chili powder, tossing gently.
- Take skinless boneless chicken breasts, slice into bite-sized pieces, and coat with smoked paprika, chili powder, salt, and pepper.
- Heat a skillet over medium-high heat, add olive oil, and sear the chicken for about 4 minutes without stirring. Flip and cook for an additional 2 minutes, adding lime juice and honey.
- Remove from heat, stir in salted butter, and fold in chopped cilantro.
- Assemble bowls with cooked rice as the base, layer with chicken, and add peach salsa on top. Garnish with cilantro and lime slices.
