Peach Salsa
  • 2 cups Yellow Peaches Fresh, diced peaches
  • 1 cup Sweet Red Bell Pepper
  • 1/2 cup Red Onion
  • 1/4 cup Green Onions Finely chopped
  • 1/4 cup Cilantro Chopped
  • 2 tablespoons Fresh Lime Juice Adjust to taste
  • 1 teaspoon Chili Powder Adjust to taste
Chicken
  • 1 pound Skinless Boneless Chicken Breasts
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
  • 2 tablespoons Olive Oil For cooking
  • 1 tablespoon Honey Maple syrup works as a substitute
  • 2 tablespoons Salted Butter Unsalted works too
Bowl Base
  • 2 cups Cooked Rice (Jasmine) Quinoa or cauliflower rice can be substituted
  • 1/4 cup Fresh Cilantro For garnish
  • 2 slices Lime Slices For garnish

Method
 

Preparation
  1. In a mixing bowl, combine the diced yellow peaches, finely chopped sweet red bell pepper, red onion, and green onions. Add freshly chopped cilantro, lime juice, and chili powder, tossing gently.
  2. Take skinless boneless chicken breasts, slice into bite-sized pieces, and coat with smoked paprika, chili powder, salt, and pepper.
  3. Heat a skillet over medium-high heat, add olive oil, and sear the chicken for about 4 minutes without stirring. Flip and cook for an additional 2 minutes, adding lime juice and honey.
  4. Remove from heat, stir in salted butter, and fold in chopped cilantro.
  5. Assemble bowls with cooked rice as the base, layer with chicken, and add peach salsa on top. Garnish with cilantro and lime slices.
