  • 4 cups red skin potatoes or Yukon Gold potatoes
  • 2 tbsp olive oil can substitute with canola or vegetable oil
  • 1 tbsp ranch seasoning mix homemade mix is optional
  • 1 tsp kosher salt or sea salt
  • 1 tsp fresh cracked pepper adjust to taste
For the Topping
  • 1 cup sharp cheddar cheese or Monterey Jack, pepper jack

Method
 

Step-by-Step Instructions
  1. Preheat your grill to medium heat, around 350°F (175°C). Cut four squares of heavy-duty aluminum foil and lightly spray them with cooking spray.
  2. In a large mixing bowl, combine bite-sized pieces of red skin potatoes with olive oil, ranch seasoning mix, kosher salt, and freshly cracked pepper. Toss until coated.
  3. Divide the seasoned potato mixture evenly among the foil squares. Fold the sides to create secure packets.
  4. Place the foil packets seam side down on the grill. Cook for 10 minutes, then flip and grill for another 10 minutes until tender.
  5. Open each packet and sprinkle sharp cheddar cheese over the cooked potatoes. Close the packets and return to the grill for 3-4 minutes until cheese melts.
  6. Remove the foil packs from the grill and let them cool slightly before serving.
