- Preheat your grill to medium heat, around 350°F (175°C). Cut four squares of heavy-duty aluminum foil and lightly spray them with cooking spray.
- In a large mixing bowl, combine bite-sized pieces of red skin potatoes with olive oil, ranch seasoning mix, kosher salt, and freshly cracked pepper. Toss until coated.
- Divide the seasoned potato mixture evenly among the foil squares. Fold the sides to create secure packets.
- Place the foil packets seam side down on the grill. Cook for 10 minutes, then flip and grill for another 10 minutes until tender.
- Open each packet and sprinkle sharp cheddar cheese over the cooked potatoes. Close the packets and return to the grill for 3-4 minutes until cheese melts.
- Remove the foil packs from the grill and let them cool slightly before serving.
