- In a large mixing bowl, combine shredded chicken with buffalo sauce and mozzarella cheese. Stir until well-coated.
- Shape the mixture into 3-inch long sticks and place on a parchment-lined baking sheet. Cover with plastic wrap and freeze for 30 minutes.
- Set up a breading station with three shallow bowls: flour, beaten eggs, and panko breadcrumbs.
