  • 2 tablespoons Fresh Dill chopped
  • 1 teaspoon Fine Sea Salt
  • 1 teaspoon Pepper freshly ground

Step-by-Step Instructions
  1. In a large pot, bring 2 quarts of water to a rolling boil. Add lemon juice, minced garlic, a bay leaf, salt, pepper, and optional Cajun seasoning for a flavorful broth.
  2. Once boiling, remove it from heat and gently add the fresh shrimp. Let them poach for about 3 minutes, or until they turn pink and opaque, then promptly transfer them to a plate to cool.
  3. Place the poached shrimp in the refrigerator to cool completely, which should take about 15-20 minutes.
  4. In a large mixing bowl, combine the cooled shrimp with diced red bell pepper, chopped celery, sliced green onion, mayonnaise, fresh lemon juice, and chopped dill.
  5. Sprinkle in fine sea salt and freshly cracked pepper to taste. Gently mix everything together until well coated.
  6. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour for flavors to meld.
