- In a large pot, bring 2 quarts of water to a rolling boil. Add lemon juice, minced garlic, a bay leaf, salt, pepper, and optional Cajun seasoning for a flavorful broth.
- Once boiling, remove it from heat and gently add the fresh shrimp. Let them poach for about 3 minutes, or until they turn pink and opaque, then promptly transfer them to a plate to cool.
- Place the poached shrimp in the refrigerator to cool completely, which should take about 15-20 minutes.
