  3. In another bowl, whisk eggs, milk, yogurt, melted butter, and vanilla until smooth.
  4. Combine wet and dry mixtures, then gently fold in chopped rhubarb.
  5. Scoop mounds of batter onto the lined baking sheet and flatten slightly.
  6. Bake for 14-16 minutes, rotating halfway through until golden brown.
  7. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
  8. Whisk together glaze ingredients; drizzle over cooled fritters.
