1 large fresh pineapple, peeled, cored, and cut into spears
8 slices of thick-cut bacon
1/2 cup maple syrup
1/4 cup bourbon
1/4 cup unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Fresh mint leaves for garnish (optional)
Instructions
Preheat your grill to medium heat. If using a stovetop grill pan, heat it over medium heat as well.
In a small saucepan, combine the maple syrup, bourbon, butter, vanilla extract, ground cinnamon, and salt. Heat over medium-low heat, stirring until the butter is melted and the mixture is well combined. Remove from heat and set aside.
Wrap each pineapple spear with a slice of bacon, securing the ends with toothpicks if necessary.
Place the bacon-wrapped pineapple spears on the grill. Cook for about 5-7 minutes on each side, or until the bacon is crispy and caramelized.
During the last few minutes of grilling, brush the maple bourbon glaze generously over the bacon-wrapped pineapple spears. Allow the glaze to caramelize slightly.
Remove the spears from the grill and let them cool for a couple of minutes. Remove any toothpicks if used.
Serve warm, garnished with fresh mint leaves if desired.
Notes
For a spicier kick, add a pinch of cayenne pepper to the glaze.
Substitute the bourbon with apple juice for a non-alcoholic version that still packs a flavorful punch.
