  • 1 large fresh pineapple, peeled, cored, and cut into spears
  • 8 slices of thick-cut bacon
  • 1/2 cup maple syrup
  • 1/4 cup bourbon
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your grill to medium heat. If using a stovetop grill pan, heat it over medium heat as well.
  2. In a small saucepan, combine the maple syrup, bourbon, butter, vanilla extract, ground cinnamon, and salt. Heat over medium-low heat, stirring until the butter is melted and the mixture is well combined. Remove from heat and set aside.
  3. Wrap each pineapple spear with a slice of bacon, securing the ends with toothpicks if necessary.
  4. Place the bacon-wrapped pineapple spears on the grill. Cook for about 5-7 minutes on each side, or until the bacon is crispy and caramelized.
  5. During the last few minutes of grilling, brush the maple bourbon glaze generously over the bacon-wrapped pineapple spears. Allow the glaze to caramelize slightly.
  6. Remove the spears from the grill and let them cool for a couple of minutes. Remove any toothpicks if used.
  7. Serve warm, garnished with fresh mint leaves if desired.
