8 slices thick-cut bacon
8 slices sourdough or brioche bread
4 tablespoons unsalted butter, softened
4 slices cheddar cheese
4 slices mozzarella cheese
4 slices provolone cheese
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
¼ teaspoon garlic powder
¼ teaspoon black pepper
Instructions
Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate and set aside.
In a small bowl, mix the mayonnaise, Dijon mustard, garlic powder, and black pepper.
Spread the mayonnaise mixture on one side of each bread slice.
Layer the cheddar, mozzarella, provolone, and 2 slices of bacon onto 4 slices of bread. Top with the remaining bread slices, sauce-side down.
Spread about ½ tablespoon butter on the outside of each sandwich.
Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3–4 minutes per side, gently pressing with a spatula.
Continue cooking until the bread is golden and crispy and all three cheeses are completely melted.
Let the sandwiches rest for 1–2 minutes, then slice and serve hot.
Notes
Cook over medium-low heat so the bread gets perfectly crisp while the cheddar, mozzarella, and provolone have enough time to melt into a gooey triple-cheese center.
